~ Chuck's Best Corn Bread ~


This is how we fix cornbread in the South!

2 - Boxes of Jiffy Corn Muffin Mix
2 - large Eggs
2/3 - cup of Milk (that’s 1/3 x 2)

And just do what it says on the box!

You could make it from scratch all day long until the cows came home and unless your Grandma ran you out of the kitchen and made it herself, you still couldn't make it as good or as cheap as Jiffy. At least not in my book, later on down the road I'll tell you how I like to tweak it a bit.

Jiffy is the best but I do as a lovely southern woman with 12 kids taught me...add a bit of sugar to it. It then becomes out of this world good!

Jiffy is the only way to go! I made muffins the other night with fried, fresh catfish :) And yes, I added a little sugar. Another good box / bag hushpuppy mix is Carolina.... uh.... Carolina something or another. (Having a brain fart here.) I think it's Carolina Pride Hushpuppy mix. Yeah that's it! It's right up there with Jiffy. Add some sugar to it, too, and don't add quite as much water as it calls for, and fry til golden brown........ooooo weeeee!

With Jiffy corn muffin mix you can also make a killer corn pudding :)

Sugar? In cornbread? Are you nuts? Adding sugar to cornbread is a crime against nature. Stop this right now.

It's not cornbread if it's got sugar in it. It's like some disgusting corn cake.

And, if it's sweet, you can't do the real southern thing with the leftovers: crumble it into a glass, cover it with buttermilk, and eat it with a spoon. Yummy! Sugar would ruin that.
