Chili or Chili Meatloaf

Chili Recipe:

2 lb Ground Chuck
1/2 onion, chopped
2 cloves garlic
1 can Mexican Style Stewed Tomatoes
1 8oz can tomato sauce
1 8oz can water
2 to 4 Tbsp chili powder
1 1/2 tsp cumin
1 4oz can chopped green chili's


In a large Dutch oven brown ground chuck and then add everything else and continue to simmer over low heat at least two hours or until done to your liking, adding more water if needed.

So how ‘bout Chili Meatloaf ??

2 lb ground beef
1/2 onion, chopped and cooked until softened
2 cloves garlic
1 can Mexican Style Stewed tomatoes, drained
2 Tbsp Chili powder
1 1/2 tsp Cumin
4oz chopped green chili's, drained
2 eggs
1 cup crushed corn chips


In a large mixing bowl combine all ingredients together forming a loaf, place the loaf in to a large greased casserole dish and bake in a 350 degree pre heated oven for 45 to 55 minutes or until done to your liking.

Now, what would you top it with? Plain ol’ ketchup, maybe a spicy ketchup, bottled chili sauce, Cheddar cheese, or even Pepper jack cheese? Your choice. Have a good day and enjoy.

i had the chili meat loaf last night and it was mighty tasty, my sister made 4 smaller test loaves. one with colbyjack cheese as a topping, one with ketchup, one with bottled chili sauce (i think it was heinz) and one with pepperjack cheese, i had the pepperjack and Em had the colbyjack we saved the rest for tonight. and don't get me started on the cheese grits, i'll save that for another post.
